I m looking up Gas Fryers and I see that they sell them based on capacity or lbs range.What I m trying to understand is does the width and depth of the fryer depend on this? Or is this referring to how much the basket can hold?Thanks for the help!

Yes, the wider and deeper, the bigger the capacity. The smallest fryer is only big enough for one basket, a bigger fryer can hold 2 or 3 baskets at the same time.
