A prospect would be any person or company who is potentially interested in your services, like restaurants and catering companies. Hotels need chefs too. I suppose that there are some very wealthy individuals out there (Bill Gates for example), who have their own personal chef. So, technically speaking, those individuals are job prospects as well. Look at all the cooking shows on TV - all of those shows need a back-up/support kitchen staff - yet another category of job prospects for a culinary arts person.
